They seem to come from verb endings -ഊരുക

കൂരുക (to sharpen) ->  കൂർമ്മ (sharpness)
തൂരുക (to become dense, thick) -> തൂർമ്മ (density / thickness) (e.g. like hair)

ഓർമ്മ doesn't seem to follow this pattern exactly. I am not sure if there is a root *ഓരുക (to come to memory).  The more common word is its കാരകം form  ഓർക്കുക (to remember)
